6 ripe nectarines, peeled, pitted, and sliced
1/2 cup granulated sugar (for fruit)
1 tablespoon all-purpose flour (for fruit)
1 teaspoon fresh lemon juice
1 cup all-purpose flour (for topping)
1/2 cup granulated sugar (for topping)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into small pieces
1/4 cup milk
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the sliced nectarines, 1/2 cup granulated sugar, 1 tablespoon all-purpose flour, and lemon juice. Toss gently to coat the nectarines. Pour the fruit mixture into the prepared baking dish.
In a separate medium bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
In a small bowl, whisk together the milk and vanilla extract. Add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
Drop spoonfuls of the topping mixture over the nectarine filling.
Bake for 35-45 minutes, or until the topping is golden brown and the fruit filling is bubbly.
Let the cobbler cool slightly before serving. It’s delicious warm with a scoop of vanilla ice cream.

Choose ripe but firm nectarines for the best results.
You can substitute peaches for nectarines if preferred.
