Amazing Nacho Cheese Queso Dip in 30 Minutes

Nacho Cheese Queso Dip

Make a creamy and delicious nacho cheese queso dip, just like you get at your favorite restaurants. It’s perfect for dipping tortilla chips and sharing with friends.

Ingredients

  • 1 tablespoon butter
  • 1/4 cup finely chopped yellow onion
  • 1 clove garlic, minced
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more, until fragrant.
  4. Add diced green chilies, diced tomatoes and green chilies, milk, and heavy cream to the saucepan.
  5. Stir in chili powder, cumin, and cayenne pepper if using. Bring to a simmer, stirring occasionally.
  6. Reduce heat to low and gradually add Monterey Jack and cheddar cheeses, stirring until melted and smooth.
  7. Continue to cook, stirring, until the dip is heated through and creamy.
  8. Serve immediately with tortilla chips.

Notes

  • For an extra creamy dip, you can add a tablespoon of cream cheese.
  • If you like a spicier dip, add more cayenne pepper or a pinch of red pepper flakes.
  • You can also add cooked, crumbled chorizo or ground beef for a heartier dip.
