Mushroom and Spinach Stuffed Chicken Breast

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup mushrooms, finely chopped
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushrooms, and cook until softened, about 5 minutes.
  3. Stir in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, mix the cooked mushroom and spinach mixture with the softened cream cheese. Season with salt and pepper.
  5. Butterfly each chicken breast by slicing it horizontally, almost all the way through, creating a pocket.
  6. Spoon the mushroom and spinach filling into the pocket of each chicken breast. If using, sprinkle mozzarella cheese over the filling.
  7. Close the chicken breast around the filling. You can secure it with toothpicks if needed.
  8. Season the outside of the chicken breasts with salt and pepper.
  9. Place the stuffed chicken breasts in a baking dish.
  10. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  11. Let rest for a few minutes before serving.

  • For an extra creamy filling, you can add a tablespoon of heavy cream to the cream cheese mixture.
