1 pound carrots, peeled and thinly sliced
1 large orange, peeled and segmented
1/4 cup chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cinnamon
Salt and freshly ground black pepper to taste
Instructions
Steam or boil the sliced carrots until tender-crisp, about 5-7 minutes. Drain well.
In a large bowl, combine the cooked carrots, orange segments, and chopped cilantro.
In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, cinnamon, salt, and pepper.
Pour the dressing over the carrot and orange mixture.
Toss gently to coat all ingredients.
Serve immediately or chill for later.
Notes
