Moroccan Chicken Tagine

This Moroccan Chicken Tagine is a fragrant and flavorful dish, slow-cooked to perfection with aromatic spices, tender chicken, sweet dried fruits, and vibrant vegetables. It’s a comforting meal that brings the taste of Morocco to your kitchen.

Ingredients

  • 1.5 kg chicken pieces, bone-in, skin-on
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 400g canned chopped tomatoes
  • 200ml chicken broth
  • 150g dried apricots, halved
  • 100g raisins
  • 1 cinnamon stick
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Season the chicken pieces generously with salt and black pepper.
  3. Heat the olive oil in a large, oven-safe pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove the chicken and set aside.
  4. Add the sliced onions to the pot and cook until softened, about 5-7 minutes.
  5. Stir in the minced garlic, ground ginger, cumin, turmeric, cinnamon, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  6. Pour in the chopped tomatoes and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  7. Return the chicken to the pot. Add the dried apricots, raisins, and cinnamon stick.
  8. Cover the pot tightly and transfer to the preheated oven.
  9. Bake for 1.5 to 2 hours, or until the chicken is tender and cooked through.
  10. Remove from the oven and discard the cinnamon stick.
  11. Garnish with fresh cilantro before serving.

Notes

  • For a richer flavor, you can marinate the chicken in the spices for at least 30 minutes before cooking.
  • Serve with couscous or crusty bread to soak up the delicious sauce.
  • Adjust the sweetness by adding more or fewer dried fruits to your preference.
