  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg until well combined.
  5. Stir in the molasses.
  6. In a small bowl, whisk together the buttermilk and vanilla extract.
  7. Alternately add the dry ingredients and the buttermilk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  8. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  10. Let the cupcakes cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
  11. While the cupcakes are cooling, prepare the frosting: In a large bowl, beat the softened butter until creamy.
  12. Gradually add the powdered sugar, alternating with the milk, beating until smooth and fluffy. Stir in the vanilla extract.
  13. Once the cupcakes are completely cool, frost them generously.
