1 sheet puff pastry, thawed
100g smoked bacon, diced
1 small onion, finely chopped
150g Gruyere cheese, grated
2 large eggs
200ml heavy cream
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 200°C (400°F). Lightly grease a mini muffin tin.
Unroll the puff pastry and cut out circles to fit the mini muffin cups. Press the pastry circles into the tin.
In a frying pan, cook the diced bacon until crisp. Remove bacon and set aside, leaving a little fat in the pan.
Add the chopped onion to the pan and cook until softened, about 5 minutes.
In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
Stir in the cooked bacon, softened onion, and grated Gruyere cheese into the egg mixture.
Spoon the filling evenly into the pastry-lined muffin cups.
Bake for 15-20 minutes, or until the quiches are golden brown and the filling is set.
Let them cool slightly before serving.
Notes
For best results, make sure your puff pastry is fully thawed but still cold.
You can prepare the filling a day in advance and assemble just before baking.
Feel free to add a pinch of nutmeg to the egg mixture for an extra layer of flavor.
