This Mexican street corn dip is inspired by elote. It is a cheesy, spicy dip perfect for parties and serving with chips.

1 (15 ounce) can sweet corn, drained
1 (4 ounce) can diced green chilies, drained
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper (optional)
Salt and pepper to taste
Instructions
Preheat oven to 350°F (175°C).
In a medium bowl, combine corn, green chilies, mayonnaise, sour cream, Parmesan cheese, cilantro, lime juice, chili powder, cumin, and cayenne pepper (if using).
Season with salt and pepper to taste.
Transfer the mixture to a small baking dish.
Bake for 20-25 minutes, or until bubbly and heated through.
Serve warm with tortilla chips.
Notes
For an extra cheesy dip, add 1/2 cup of shredded Monterey Jack cheese.
Garnish with extra cilantro and a sprinkle of chili powder before serving.
