Mexican street corn bowl

Enjoy this delicious Mexican street corn bowl, also known as esquites. It’s a less messy, loaded corn bowl packed with creamy sauce and your favorite toppings. Perfect for a flavorful meal.

  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese, plus more for garnish
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder, plus more for garnish
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: diced red onion, jalapeño slices, avocado

Instructions

  1. If using fresh corn, cut kernels off the cobs. If using frozen corn, thaw it.
  2. In a large skillet, heat a tablespoon of oil over medium heat. Add the corn kernels and cook until tender and slightly charred, about 5-7 minutes.
  3. While the corn is cooking, in a medium bowl, whisk together the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and smoked paprika.
  4. Once the corn is cooked, remove the skillet from the heat.
  5. Add the creamy sauce mixture to the warm corn and stir until everything is well combined and the corn is coated.
  6. Season with salt and pepper to your liking.
  7. Serve the Mexican street corn bowl immediately. Garnish with additional cotija cheese, cilantro, and chili powder. Add any optional toppings you desire.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the sauce.
  • You can grill the corn on the cob for an extra smoky flavor before cutting off the kernels.
