  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced squash and zucchini.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped red onion and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the drained diced tomatoes, crumbled feta cheese, chopped parsley, and chopped dill.
  6. Season with salt and pepper.
