  • 200g good quality white chocolate, chopped
  • 100g heavy cream
  • 2 teaspoons matcha green tea powder, sifted
  • 1 tablespoon unsalted butter, softened
  • Pinch of salt
  • Extra matcha powder for dusting

Instructions

  1. Place the chopped white chocolate in a medium heatproof bowl.
  2. Heat the heavy cream in a small saucepan until it just begins to simmer. Do not boil.
  3. Pour the hot cream over the white chocolate. Let it sit undisturbed for 2 minutes.
  4. Stir the mixture gently from the center outwards until the chocolate is completely melted and smooth.
  5. Whisk in the sifted matcha powder and softened butter until fully incorporated and the mixture is uniformly green.
  6. Stir in the pinch of salt.
  7. Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the ganache.
  8. Refrigerate for at least 3 hours, or until firm enough to scoop.
  9. Scoop the chilled ganache using a small spoon or melon baller. Roll the portions quickly between your palms into smooth balls.
  10. Place the rolled truffles on a parchment-lined tray.
  11. Dust generously with extra sifted matcha powder before serving or storing.

Notes

  • Use ceremonial grade matcha for the best color and flavor.
  • If the truffles become too soft while rolling, chill them for 10 minutes.
  • Store truffles in an airtight container in the refrigerator for up to one week.
