A quick and fresh salsa combining sweet mango, creamy avocado, and savory black beans. This recipe is simple to assemble and great for dipping or topping meals.

  • 2 ripe mangoes, diced
  • 2 ripe avocados, diced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the mangoes, avocados, red onion, jalapeño, and cilantro according to the ingredient list.
  2. In a medium bowl, combine the diced mango, diced avocado, rinsed black beans, chopped red onion, minced jalapeño, and chopped cilantro.
  3. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
  4. Pour the dressing over the fruit and bean mixture.
  5. Gently fold all ingredients together until just combined. Avoid over-mixing to keep the avocado chunks intact.
  6. Taste and adjust salt or lime juice if needed.
  7. Serve immediately or chill for 15 minutes to allow flavors to meld.

Notes

  • Rinse the black beans well to remove excess sodium and starch.
  • If you prefer a milder salsa, remove all seeds and white membranes from the jalapeño.
