2 medium sweet potatoes
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
1/2 cup cooked shredded chicken or your favorite protein
1/4 cup black beans, rinsed and drained
1/4 cup corn kernels
1/4 cup shredded cheddar cheese
2 tablespoons chopped fresh cilantro

Instructions
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes and prick them all over with a fork.
Rub the sweet potatoes with olive oil, salt, and pepper.
Bake for 45-60 minutes, or until fork-tender. Let them cool slightly.
Cut the sweet potatoes in half lengthwise. Scoop out most of the flesh, leaving about a 1/4-inch shell.
Arrange the sweet potato shells on a baking sheet.
Fill each shell with shredded chicken, black beans, and corn.
