Loaded Guacamole with Plantain Chips

This loaded guacamole recipe is perfect for parties. It’s creamy, flavorful, and served with crispy plantain chips for a delicious appetizer.

Ingredients

  • 3 ripe avocados
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1-2 jalapenos, seeded and minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons diced tomatoes
  • 1 tablespoon diced red bell pepper
  • 1/4 cup cooked, crumbled bacon (optional)
  • Plantain chips, for serving

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a medium bowl.
  2. Mash the avocado with a fork until it’s mostly smooth but still has some chunks.
  3. Add the red onion, cilantro, jalapenos, lime juice, salt, and pepper to the bowl.
  4. Stir gently to combine all the ingredients.
  5. Fold in the cotija cheese, diced tomatoes, diced red bell pepper, and crumbled bacon (if using).
  6. Taste and adjust seasoning if needed.
  7. Serve immediately with plantain chips.

Notes

  • For a spicier guacamole, leave some seeds in the jalapenos.
  • If you don’t have cotija cheese, feta cheese can be substituted.
  • This guacamole is best served fresh.
