Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, squeezed dry
  • 1/4 cup fresh lemon juice
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated zucchini.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the bars are baking, prepare the glaze by whisking together the fresh lemon juice and powdered sugar until smooth.
  10. Once the bars are out of the oven, let them cool in the pan for 10 minutes before drizzling the glaze over the top.
  11. Allow the glaze to set before cutting the bars into squares.

Notes

  • Ensure your zucchini is squeezed dry to prevent soggy bars.
  • Adjust the amount of lemon juice in the glaze to your preferred sweetness and tartness.
