Lemon Herb Shrimp Skewers

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a medium bowl, whisk together lemon juice, olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper. This is your bright marinade.
  3. Add the shrimp to the marinade. Toss gently to coat completely. Cover and refrigerate for at least 20 minutes, but no more than an hour.
  4. Preheat your grill to medium-high heat. Lightly oil the grates.
  5. Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer. Discard the excess marinade.
  6. Place the skewers on the preheated grill.
  7. Grill for 2-3 minutes per side until the shrimp are pink and opaque. Do not overcook.
  8. Remove from the grill and serve immediately. Enjoy the flavor!
