Lemon Garlic Grilled Salmon with Zucchini Noodles

  • 2 Salmon fillets (about 6 oz each)
  • 2 medium Zucchinis
  • 2 tablespoons Olive oil, divided
  • 2 cloves Garlic, minced
  • 1/4 cup Fresh lemon juice
  • 1 teaspoon Lemon zest
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare your grill for medium-high heat.
  2. Spiralize the zucchinis into noodles; set aside.
  3. In a small bowl, whisk together 1 tablespoon of olive oil, minced garlic, lemon juice, and lemon zest. This is your marinade.
  4. Brush the salmon fillets with half of the lemon-garlic marinade. Season both sides with salt and pepper.
  5. Grill the salmon for 4-6 minutes per side, depending on thickness, until cooked through and flaky.
  6. While the salmon cooks, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  7. Add the zucchini noodles to the skillet. Sauté for 2-3 minutes until slightly tender-crisp. Do not overcook.
  8. Toss the zucchini noodles with the remaining lemon-garlic marinade. Season with salt and pepper.
  9. Divide the zucchini noodles between two plates. Top each with a grilled salmon fillet.
  10. Garnish with fresh chopped parsley before serving.

Notes

  • You can use a vegetable peeler to create wide zucchini ribbons if you do not have a spiralizer.
  • For extra flavor, you can marinate the salmon for up to 30 minutes before grilling.
  • If you prefer not to grill, you can bake the salmon at 400 degrees F for 12-15 minutes.
