2 Salmon fillets (about 6 oz each)
2 medium Zucchinis
2 tablespoons Olive oil, divided
2 cloves Garlic, minced
1/4 cup Fresh lemon juice
1 teaspoon Lemon zest
Salt to taste
Black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Prepare your grill for medium-high heat.
Spiralize the zucchinis into noodles; set aside.
In a small bowl, whisk together 1 tablespoon of olive oil, minced garlic, lemon juice, and lemon zest. This is your marinade.
Brush the salmon fillets with half of the lemon-garlic marinade. Season both sides with salt and pepper.
Grill the salmon for 4-6 minutes per side, depending on thickness, until cooked through and flaky.
While the salmon cooks, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
Add the zucchini noodles to the skillet. Sauté for 2-3 minutes until slightly tender-crisp. Do not overcook.
Toss the zucchini noodles with the remaining lemon-garlic marinade. Season with salt and pepper.
Divide the zucchini noodles between two plates. Top each with a grilled salmon fillet.
Garnish with fresh chopped parsley before serving.
Notes
You can use a vegetable peeler to create wide zucchini ribbons if you do not have a spiralizer.
For extra flavor, you can marinate the salmon for up to 30 minutes before grilling.
If you prefer not to grill, you can bake the salmon at 400 degrees F for 12-15 minutes.
