Leftover Meatloaf Sandwich with Spicy Glaze

Transform your leftover meatloaf into a flavorful sandwich using a quick, spicy glaze and your favorite bread.

Ingredients

  • 2 slices sturdy bread (sourdough or rye recommended)
  • 4 slices cooked meatloaf (about 1/4 inch thick)
  • 1 tablespoon butter or oil for cooking
  • 2 slices sharp cheddar cheese (optional)
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup shredded lettuce
  • 2 thin slices tomato
  • 1 tablespoon pickled jalapeƱos or onions (optional)
  • For the Spicy Glaze:
  • 2 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon hot sauce (adjust to your heat preference)
  • 1/4 teaspoon apple cider vinegar

Instructions

  1. Prepare the Spicy Glaze: In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, hot sauce, and apple cider vinegar until smooth. Set aside.
  2. Prepare the Meatloaf: Heat the butter or oil in a skillet over medium heat. Place the meatloaf slices in the hot skillet. Cook for 2 to 3 minutes per side until the meatloaf is heated through and slightly browned on the edges.
  3. Assemble the Sauce Base: In a separate small bowl, mix the mayonnaise and Dijon mustard.
  4. Toast the Bread: Lightly toast your bread slices if desired.
  5. Glaze the Meatloaf: During the last minute of cooking the meatloaf, brush half of the prepared Spicy Glaze generously over the top of the slices. Flip and brush the other side with the remaining glaze. Remove from heat.
  6. Build the Sandwich: Spread the mayonnaise-mustard mixture on both slices of bread. Layer the bottom slice with lettuce, the glazed meatloaf slices, and the cheese (if using). Top with tomato slices and pickled jalapeƱos or onions.
  7. Close and Serve: Place the top slice of bread on the sandwich. Cut in half and serve immediately.

Notes

  • For a grilled sandwich, assemble the sandwich with cheese inside, butter the outside of the bread, and grill like a grilled cheese until golden brown and the cheese melts.
  • If you prefer a softer meatloaf texture, you can reheat the slices briefly in the microwave before pan-frying them in the glaze.
  • Use leftover pan drippings from the meatloaf instead of butter to fry the slices for extra flavor.
