Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 10-12 full sheets)
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 14 ounces sweetened condensed milk
  • 4 large egg yolks
  • ½ cup key lime juice (from about 8-10 key limes)
  • 1 teaspoon lime zest
  • Whipped cream, for serving (optional)
  • Lime slices, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs and ¼ cup granulated sugar. Pour in the melted butter and stir until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan. Bake for 8-10 minutes, until lightly golden. Let cool while you prepare the filling.
  4. In a large bowl, whisk together the sweetened condensed milk and egg yolks until smooth.
  5. Stir in the key lime juice and lime zest until well combined.
  6. Pour the key lime filling evenly over the baked graham cracker crust.
  7. Bake for 20-25 minutes, or until the edges are set and the center is just slightly jiggly.
  8. Let the bars cool completely on a wire rack, then refrigerate for at least 2 hours, or until firm.
  9. Once chilled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares.
  10. Serve chilled, topped with whipped cream and lime slices if desired.

Notes

  • For a brighter lime flavor, use fresh key lime juice.
  • Ensure the bars are fully chilled before cutting for clean slices.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
