  • 1 bunch kale, stems removed and chopped
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • For the Dressing:
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the rinsed and drained chickpeas with olive oil, garlic powder, salt, and pepper on a baking sheet.
  3. Roast the chickpeas for 20-25 minutes, or until crispy, shaking the pan halfway through.
  4. While the chickpeas are roasting, prepare the dressing. In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth.
  5. In a large bowl, combine the chopped kale and grated Parmesan cheese.
  6. Add about half of the dressing to the kale and toss to coat evenly. Add more dressing as needed until the kale is well coated.
  7. Once the chickpeas are roasted and cooled slightly, add them to the salad.
  8. Toss gently to combine everything.
