  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 8 ounces pasta (fettuccine or linguine recommended)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish
  • For the Mango Salsa:
  • 1 ripe mango, diced
  • 1/4 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and minced (optional, for heat)
  • 1 lime, juiced

Instructions

  1. In a bowl, toss the peeled and deveined shrimp with jerk seasoning until well coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
  3. Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  4. While the pasta cooks, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, cilantro, minced jalapeño (if using), and lime juice. Stir gently to combine.
  5. In the same skillet used for the shrimp, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  6. Pour in heavy cream and chicken or vegetable broth. Bring to a gentle simmer, stirring occasionally.
  7. Add the cooked pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  8. Return the cooked shrimp to the skillet and gently toss with the pasta and sauce. Season with salt and black pepper to taste.
  9. Serve the jerk shrimp pasta immediately, topped with generous spoonfuls of fresh mango salsa and garnished with chopped cilantro.
