It combines the savory depth of miso with the zesty kick of fresh ginger, creating a comforting bowl perfect for any occasion. Ingredients

Scale
  • 4 cups vegetable broth
  • 2 tablespoons white miso paste
  • 1 inch fresh ginger, peeled and thinly sliced
  • 1/2 block silken tofu, cubed
  • 2 green onions, thinly sliced
  • 1 sheet nori, cut into thin strips (optional)

Instructions

  1. In a medium pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the sliced ginger to the broth and let it simmer for 5 minutes to infuse the flavor.
  3. In a small bowl, whisk the miso paste with a ladleful of the hot broth until smooth. This prevents the miso from clumping.
  4. Pour the miso mixture back into the pot. Do not boil the soup after adding the miso, as this can diminish its flavor and beneficial properties.
  5. Gently add the cubed tofu to the soup.
  6. Simmer for another 2-3 minutes, just until the tofu is heated through.
  7. Ladle the soup into bowls.
  8. Garnish with sliced green onions and nori strips, if using.

Notes

  • For a richer flavor, you can use dashi broth instead of vegetable broth.
  • Adjust the amount of ginger to your preference for spiciness.
  • Silken tofu is recommended for its delicate texture, but firm tofu can also be used.
