Jalapeño Cheddar Corn Fritters

These jalapeño cheddar corn fritters are crispy on the outside and tender on the inside, with a delightful kick from jalapeños and a cheesy burst from cheddar. They’re perfect as a snack or a side dish.

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1-2 jalapeños, finely chopped (seeds removed for less heat)
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Stir in the corn, chopped jalapeños, and shredded cheddar cheese.
  3. In a separate bowl, whisk together the egg, milk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Heat about 1 inch of vegetable oil in a large skillet or Dutch oven over medium-high heat to 350°F (175°C).
  6. Carefully drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry for 2-3 minutes per side, until golden brown and cooked through.
  8. Remove fritters with a slotted spoon and drain on a wire rack or paper towels.

  • You can add other cheeses like Monterey Jack or pepper jack.
