1 pound corn on the cob, husks removed
1/2 cup water
1/4 cup mayonnaise
1/4 cup crumbled cotija cheese
2 tablespoons chopped cilantro
1 tablespoon lime juice
1 teaspoon chili powder
Salt to taste
Instructions
Place the corn and water in your Instant Pot.
Secure the lid and set the valve to sealing.
Cook on high pressure for 2 minutes.
Allow for a quick pressure release.
Carefully remove the corn from the Instant Pot.
In a small bowl, mix together the mayonnaise, cotija cheese, cilantro, lime juice, and chili powder.
Spread the mixture over the corn.
Season with salt to taste.
Serve immediately.
Notes
You can adjust the amount of chili powder to your spice preference.
If you don’t have cotija cheese, feta cheese can be a substitute.
For a spicier kick, add a pinch of cayenne pepper.
