Instant Pot Honey Garlic Chicken and Broccoli

Make this delicious Honey Garlic Chicken and Broccoli dinner fast with your Instant Pot. This recipe brings that amazing flavor to your table on a busy weeknight.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • 3 cups fresh broccoli florets

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Set the Instant Pot to Sauté mode. Add olive oil. When hot, add chicken and cook until lightly browned, about 3-4 minutes. Press Cancel.
  3. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  4. In a separate bowl, whisk together the soy sauce, honey, ketchup, rice vinegar, minced garlic, and ginger. Pour this sauce over the chicken.
  5. Secure the lid and set the valve to Sealing. Cook on High Pressure for 4 minutes.
  6. When the time is up, carefully perform a Quick Release (QR).
  7. Stir in the cornstarch slurry. Set the Instant Pot to Sauté mode again. Let the sauce simmer until it thickens, stirring constantly (about 1-2 minutes).
  8. Add the broccoli florets to the pot. Stir them into the sauce.
  9. Secure the lid again (do not seal the valve) and let the residual heat steam the broccoli for 5 minutes until tender-crisp.
  10. Serve immediately over rice or noodles, if desired.

Notes

  • For a lower sodium version, use low-sodium soy sauce.
  • You can use frozen broccoli, but add it directly after the pressure cooking step and skip the final steaming step; just stir until heated through.
  • Taste the sauce before adding the slurry; adjust honey or vinegar to your preference.
