Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Set your Instant Pot to Saute mode. Add olive oil. Once hot, add ground beef and cook, breaking it up, until browned. Drain off excess fat.
  2. Add chopped onion to the Instant Pot and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add kidney beans, black beans, crushed tomatoes, diced tomatoes and green chilies, beef broth, chili powder, cumin, salt, and pepper to the Instant Pot. Stir to combine.
  5. Secure the lid and set the valve to sealing. Cook on Manual or Pressure Cook mode on high pressure for 10 minutes.
  6. Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release for any remaining pressure.
  7. Open the lid, stir the chili, and serve hot.

Notes

  • For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • Serve with your favorite toppings like shredded cheese, sour cream, avocado, or chopped cilantro.
  • This chili freezes well for future meals.
