  • 2 pounds boneless, skinless chicken thighs
  • 1 cup BBQ sauce
  • 1/2 cup beer
  • 1/4 cup chopped onion
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 taco shells
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream

Instructions

  1. Place chicken thighs in the Instant Pot.
  2. Add BBQ sauce, beer, chopped onion, chili powder, cumin, garlic powder, salt, and pepper.
  3. Secure the lid and set the valve to sealing.
  4. Cook on high pressure for 10 minutes.
  5. Allow for a 10-minute natural pressure release, then carefully quick release any remaining pressure.
  6. Remove chicken from the Instant Pot and shred it with two forks.
  7. Return shredded chicken to the pot and stir to coat with the sauce.
  8. Warm taco shells according to package directions.
  9. Fill taco shells with the pulled chicken mixture.
  10. Add your favorite toppings and enjoy!

Notes

  • For a spicier kick, add a pinch of cayenne pepper.
  • If you don’t have beer, you can substitute with chicken broth or water.
