  • 2 large eggs
  • 1/4 cup refried beans
  • 1/4 cup salsa ranchera
  • 1 tablespoon vegetable oil

Instructions

  1. Warm the refried beans in a small saucepan over medium-low heat.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Lightly fry the corn tortillas in the skillet until softened, about 30 seconds per side. Remove from skillet and place on serving plates.
  4. Crack the eggs into the same skillet and fry them to your desired doneness (sunny-side up or over-easy recommended).

  7. Spoon salsa ranchera over the eggs.
