Baked Hot Honey Feta Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup hot honey (or regular honey mixed with 1/2 teaspoon red pepper flakes)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. Pat the chicken breasts dry. Rub them with olive oil, oregano, garlic powder, salt, and pepper. Place the chicken in the prepared baking dish.
  3. In a small bowl, whisk together the hot honey and lemon juice.
  4. Pour the hot honey mixture evenly over the chicken breasts.
  5. Bake for 15 minutes.
  6. Remove the dish from the oven and sprinkle the crumbled feta cheese over the top of the chicken.
  7. Return the dish to the oven and bake for another 5 to 10 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the feta is slightly softened.
  8. Let the chicken rest for 5 minutes before serving.

Notes

  • If you do not have hot honey, mix 1/4 cup of regular honey with 1/2 teaspoon of red pepper flakes to create your own spicy glaze.
  • You can add cherry tomatoes or sliced red onion to the baking dish for extra vegetables.
  • For crispier edges, briefly broil the chicken for the last 1-2 minutes, watching carefully to prevent burning.
