  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, salt, and pepper until they are evenly coated.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for 15 minutes.
  5. Remove the carrots from the oven. Drizzle the honey over the carrots and sprinkle with fresh thyme. Toss gently to coat.
  6. Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender and lightly caramelized.
