Honey Garlic Butter Roasted Carrots

A simple recipe for making tender, caramelized roasted carrots coated in a sweet and savory honey garlic butter glaze.

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the cut carrots on a large baking sheet.
  3. In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper.
  4. Pour the honey garlic butter mixture over the carrots and toss until they are evenly coated.
  5. Spread the carrots in a single layer on the baking sheet.
  6. Roast for 25 to 30 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.
  7. Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

  • For extra flavor, add 1/4 cup of grated Parmesan cheese during the last 5 minutes of roasting.
  • If your carrots are very thick, cut them into smaller pieces to ensure even cooking.
  • Use fresh garlic for the best flavor in the glaze.
