Homemade Shepherd's Pie

A hearty and comforting homemade Shepherd’s Pie, featuring a savory ground meat and vegetable filling topped with creamy mashed potatoes and baked to golden perfection. It’s a classic dish that brings warmth and joy to any meal.

Ingredients

  • 1.5 lbs ground beef or lamb
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste
  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
  3. While potatoes are boiling, brown the ground meat in a large oven-safe skillet or Dutch oven over medium-high heat. Drain off any excess fat.
  4. Add the chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  5. Stir in the minced garlic, tomato paste, thyme, and rosemary. Cook for 1 minute more until fragrant.
  6. Pour in the beef broth and Worcestershire sauce. Bring to a simmer, then reduce heat and cook for 5 minutes, allowing the sauce to thicken slightly.
  7. Stir in the frozen peas and corn. Season the meat mixture with salt and pepper to taste.
  8. Drain the boiled potatoes and mash them with milk, butter, salt, and pepper until smooth and creamy.
  9. Spread the mashed potatoes evenly over the meat filling in the skillet. You can create decorative peaks with a fork if you like.
  10. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly. If using cheese, sprinkle it over the potatoes during the last 5 minutes of baking.
  11. Let it rest for a few minutes before serving.

Notes

  • You can use lamb for a more traditional Shepherd’s Pie.
  • Feel free to add other vegetables like mushrooms or parsnips to the filling.
  • For a richer topping, use heavy cream instead of milk.
  • If you don’t have an oven-safe skillet, transfer the meat filling to a baking dish before topping with mashed potatoes.
