Homemade Roasted Tomato Basil Soup

  • 2 pounds ripe tomatoes, halved or quartered
  • 1 large yellow onion, cut into wedges
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves
  • 1 tablespoon butter (optional)
  • Pinch of sugar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the tomatoes, onion, and garlic with olive oil, salt, and pepper.
  3. Roast for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  4. Remove the garlic from its skin.
  5. Transfer the roasted vegetables to a blender or food processor. Add the vegetable broth and basil.
  6. Blend until smooth.
  7. Pour the soup into a pot and heat over medium heat. If using, stir in the butter and a pinch of sugar. Heat through but do not boil.
  8. Serve hot.
