Homemade Granola Parfait

Start your day with a delicious and healthy homemade granola parfait. This recipe is perfect for meal prep and can be made ahead for a quick breakfast.

  • 1 cup rolled oats
  • 1/2 cup nuts (almonds, walnuts, or pecans), chopped
  • 1/4 cup seeds (chia, flax, or sunflower), optional
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon olive oil or melted coconut oil
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup fresh berries
  • 1/4 cup sliced fruit (banana, peach, or apple)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, combine oats, nuts, seeds, and coconut.
  3. In a small bowl, whisk together maple syrup, oil, cinnamon, and salt.
  4. Pour the wet ingredients over the dry ingredients and mix until well combined.
  5. Spread the mixture evenly on a baking sheet.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant. Let cool completely.
  7. To assemble the parfaits, layer granola, Greek yogurt, and fruit in glasses or jars.
  8. Repeat the layers until the glasses are full.
  9. Serve immediately or refrigerate for later.

Notes

  • You can customize your granola with different nuts, seeds, and spices.
  • If you prefer a sweeter granola, add an extra tablespoon of maple syrup.
  • For a vegan option, use maple syrup instead of honey and plant-based yogurt.
