1 cup fresh strawberries, hulled
1/2 cup Greek yogurt, plain, non-fat
1/4 cup cream cheese, light
2 tablespoons protein powder, vanilla or unflavored
1 tablespoon honey or maple syrup (optional)
1/2 teaspoon vanilla extract
Pinch of salt
1/4 cup graham cracker crumbs or crushed digestive biscuits
Instructions
Wash and hull the strawberries. Slice a few for garnish if desired.
In a food processor or blender, combine the remaining strawberries, Greek yogurt, light cream cheese, protein powder, honey (if using), vanilla extract, and a pinch of salt. Blend until smooth and creamy.
Spoon the mixture into a piping bag or a resealable plastic bag with the corner snipped off.
Line a baking sheet with parchment paper. Pipe small dollops of the cheesecake mixture onto the parchment paper.
Sprinkle each dollop with graham cracker crumbs.
Place the baking sheet in the freezer for at least 2 hours, or until firm.
Once frozen, transfer the cheesecake bites to an airtight container and store in the freezer.
Notes
For a richer flavor, use full-fat cream cheese.
Adjust the sweetness to your preference by adding more or less honey.
These bites are best enjoyed directly from the freezer.
You can use other berries like raspberries or blueberries.
