1 cup quinoa, rinsed
2 cups vegetable broth
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 zucchini, chopped
1 red onion, chopped
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped
2 tablespoons fresh chives, chopped
Instructions
Preheat your oven to 400°F (200°C).
In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed and quinoa is fluffy.
While the quinoa cooks, toss the chopped bell peppers, zucchini, and red onion with olive oil, oregano, thyme, salt, and pepper on a baking sheet.
Roast the vegetables for 20-25 minutes, or until tender and slightly caramelized.
Once the quinoa is cooked, fluff it with a fork.
Gently stir the roasted vegetables into the cooked quinoa.
Fold in the fresh parsley and chives.
Serve warm and enjoy the delicious flavors!
