  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 1 cup fresh breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the rack of lamb dry with paper towels.
  3. Rub the lamb all over with olive oil and season generously with salt and pepper.
  4. In a small bowl, combine the breadcrumbs, parsley, rosemary, thyme, and minced garlic. Mix well.
  5. Brush the top of the lamb rack with Dijon mustard.
  6. Press the herb and breadcrumb mixture firmly onto the mustard-coated side of the lamb, creating an even crust.
  7. Place the lamb rack, herb-crusted side up, in a roasting pan.
  8. Roast for 20-25 minutes for medium-rare, or until an instant-read thermometer inserted into the thickest part of the meat (not touching bone) registers 130-135°F (54-57°C). Adjust time for desired doneness.
  9. Let the lamb rest for 10 minutes before carving and serving.
