  • 1/2 cup granulated sugar, divided
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

  • 4 1/2 cups all-purpose flour, plus more for dusting
  • 1/2 cup unsalted butter, softened
  • Vegetable oil, for frying
  • 1 cup strawberry jam
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Let stand for 5-10 minutes until foamy.
  2. Whisk in the remaining sugar, eggs, vanilla extract, and salt.
  3. Gradually add the flour, mixing until a shaggy dough forms.
  4. Add the softened butter and mix until incorporated.
  5. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  7. Punch down the dough and roll it to about 1/2-inch thickness.
  8. Cut out circles using a 3-inch round cutter.
  9. Place the circles on a floured baking sheet, cover loosely, and let rise for another 30 minutes.
  10. Heat about 3 inches of vegetable oil in a deep pot or Dutch oven to 350F (175C).
  11. Fry the doughnuts in batches for 2-3 minutes per side, until golden brown.
  12. Remove with a slotted spoon and drain on paper towels.
  13. Once slightly cooled, use a piping bag to inject each doughnut with strawberry jam.
  14. Dust generously with powdered sugar before serving.
