  • 1 pound ground beef
  • 1 large onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced

  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1/2 cup sour cream
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 12 ounces egg noodles, cooked according to package directions
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and sliced mushrooms to the skillet. Cook, stirring occasionally, until vegetables soften, about 5-7 minutes.
  3. Stir in minced garlic, dried thyme, and paprika. Cook for 1 minute more, until fragrant.
  4. Sprinkle flour over the beef and vegetable mixture. Stir well to coat everything, and cook for 1-2 minutes, allowing the flour to cook out.
  5. Gradually whisk in beef broth, stirring constantly to prevent lumps. Bring the mixture to a simmer, then reduce heat to low and cook for 5-7 minutes, or until the sauce thickens.
  6. In a small bowl, whisk together sour cream and milk until smooth. Remove the skillet from the heat and stir the sour cream mixture into the beef mixture until well combined.
  7. Season with salt and black pepper to taste.
  8. Serve the stroganoff immediately over cooked egg noodles. Garnish with fresh parsley, if desired.
