Grilled Pineapple Chicken

This recipe features tender chicken marinated in a sweet and tangy pineapple sauce, then grilled to perfection. It’s a tropical delight that brings a taste of sunshine to your plate.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup fresh pineapple chunks

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, honey, rice vinegar, ginger, garlic, black pepper, and red pepper flakes.
  2. Place chicken thighs in a resealable bag or shallow dish. Pour half of the marinade over the chicken, ensuring it’s well coated. Reserve the other half for basting.
  3. Marinate chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
  4. Preheat your grill to medium-high heat.
  5. Thread pineapple chunks onto skewers if desired.
  6. Remove chicken from marinade, discarding the marinade used for the chicken.
  7. Place chicken on the preheated grill. Cook for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Brush with reserved marinade during the last few minutes of grilling.
  8. Grill pineapple chunks for 2-3 minutes per side until lightly charred.
  9. Serve grilled pineapple chicken with grilled pineapple.

Notes

  • For best flavor, marinate the chicken for at least 2 hours.
  • If you don’t have chicken thighs, you can use chicken breast, but adjust cooking time to prevent drying out.
  • Fresh pineapple is recommended for the best taste and texture.
