1 pound gnocchi
2 tablespoons olive oil, plus more for drizzling
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 zucchini, sliced
1 red onion, cut into wedges
1/4 cup balsamic vinegar
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
Salt and freshly ground black pepper to taste
1/4 cup fresh basil leaves, chopped
1/4 cup cherry tomatoes, halved
Instructions
Preheat your grill to medium-high heat.
Toss the gnocchi, bell peppers, zucchini, and red onion with 2 tablespoons of olive oil, salt, and pepper.
Grill the vegetables and gnocchi for about 5-7 minutes, turning occasionally, until tender and slightly charred.
While the vegetables and gnocchi are grilling, whisk together the balsamic vinegar, lemon juice, Dijon mustard, and a drizzle of olive oil in a large bowl. Season with salt and pepper.
Add the grilled gnocchi and vegetables to the bowl with the dressing.
Toss gently to combine.
Stir in the fresh basil and cherry tomatoes.
Serve immediately.
Notes
For extra flavor, you can marinate the vegetables before grilling.
Feel free to add other grilled vegetables like asparagus or corn.
A sprinkle of Parmesan cheese or crumbled feta can be a nice addition.
