Ingredients
Scale
1 pound fresh green beans, trimmed
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 teaspoon soy sauce
1/4 teaspoon black pepper
1 1/2 cups crispy fried onions, divided
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 1.5-quart baking dish.
Blanch the trimmed green beans in boiling water for 3-4 minutes until bright green and tender-crisp. Drain them well.
In a large bowl, whisk together the cream of mushroom soup, milk, soy sauce, and black pepper until smooth.
Gently fold the blanched green beans into the soup mixture until they are evenly coated.
Pour the bean mixture into your prepared baking dish.
Bake for 25 minutes.
Remove the casserole from the oven. Sprinkle 1 cup of the crispy fried onions evenly over the top.
Return the casserole to the oven and bake for another 5 minutes, or until the topping is golden brown.
Remove from the oven and sprinkle the remaining 1/2 cup of crispy fried onions over the hot casserole immediately before serving.
Notes
Using fresh green beans instead of canned makes a big difference in texture.
For extra flavor, use a homemade cream of mushroom soup base.
Make sure to drain the blanched beans thoroughly to avoid a watery casserole.
