1 pound orzo pasta
1 cucumber, diced
1 pint cherry tomatoes, halved
1/2 red onion, finely chopped
1/2 cup Kalamata olives, pitted and halved
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup crumbled feta cheese
For the Dressing:
1/4 cup olive oil
2 tablespoons lemon juice
1 clove garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Cook orzo pasta according to package directions. Drain and rinse with cool water.
In a large bowl, combine the cooked orzo, diced cucumber, halved cherry tomatoes, chopped red onion, Kalamata olives, chopped parsley, and chopped mint.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper.
Pour the dressing over the orzo mixture and toss gently to combine.
Stir in the crumbled feta cheese.
Serve immediately or chill for later.
