  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, and pepper.
  2. Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes before use to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
  5. Preheat your grill to medium-high heat.
  6. Grill the souvlaki skewers for about 4-6 minutes per side, or until the chicken is cooked through and has nice grill marks.
