1 large head of cauliflower, cut into florets
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1/2 teaspoon ground ginger
4 cups vegetable broth
1/2 cup unsweetened almond milk (or other milk for creaminess)
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Stir in the minced garlic, turmeric, and ginger. Cook for 1 minute until fragrant.
Add the cauliflower florets and vegetable broth to the pot.
Bring the mixture to a boil, then reduce heat and simmer until the cauliflower is very tender, about 15-20 minutes.
Carefully transfer the soup to a high-speed blender (or use an immersion blender).
Add the almond milk. Blend until completely smooth and creamy.
Return the soup to the pot if necessary. Season with salt and pepper to your taste.
