2 1/4 cups gluten-free all-purpose flour blend
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Cinnamon-Sugar Coating:
1/4 cup granulated sugar
1 teaspoon ground cinnamon
For Decoration:
Royal icing
Sprinkles, edible glitter, or other decorations
Instructions
In a medium bowl, whisk together the gluten-free flour blend, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
In a small bowl, combine the 1/4 cup granulated sugar and cinnamon for the coating.
Shape the dough into small balls, about 1-inch in diameter.
Roll each ball in the cinnamon-sugar mixture to coat evenly.
Place the coated balls onto a baking sheet lined with parchment paper, about 2 inches apart.
Using the back of a spoon or your thumb, gently flatten each cookie slightly.
Create a small hole in the top of each cookie for hanging, like an ornament.
Bake in a preheated oven at 375°F (190°C) for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once completely cool, decorate the cookies with royal icing and sprinkles to resemble ornaments.
Allow the icing to dry completely before storing or serving.
Notes
Ensure your gluten-free flour blend contains xanthan gum. If it doesn’t, add 1/2 teaspoon.
For a smoother dough, chill it for about 30 minutes before shaping.
Be careful not to overbake, as gluten-free cookies can become dry quickly.
You can use a straw or the end of a wooden skewer to create the ornament hole.
