Glazed Carrot Parsnip Mash

A delightful mash combining the sweetness of roasted carrots and parsnips with a simple glaze, perfect for any holiday table.

Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound parsnips, peeled and sliced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sliced carrots and parsnips with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes, or until tender and slightly caramelized.
  4. Transfer the roasted vegetables to a food processor or a large bowl.
  5. Add butter, honey or maple syrup, and thyme leaves (if using).
  6. Mash the vegetables until mostly smooth, leaving some texture if you prefer.
  7. Taste and adjust seasoning as needed.
