Gingerbread Spiced Brownie Bites

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang.
  2. Melt the butter in a small saucepan over low heat or in the microwave.
  3. Whisk the sugar into the melted butter until combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, salt, ginger, cinnamon, cloves, and nutmeg.
  6. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  7. Fold in the chopped nuts, if using.
  8. Spread the batter evenly into the prepared baking pan.
  9. Bake for 20 to 25 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  10. Let the brownies cool completely in the pan on a wire rack.
  11. Once cool, lift the brownies out using the parchment paper overhang. Cut into small, bite-sized squares.
