  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  2. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve warm with maple syrup.

Notes

  • For extra gingerbread flavor, add 1 tablespoon of molasses to the wet ingredients.
  • You can make the batter ahead of time and store it in the refrigerator for up to 2 days.
  • Top with whipped cream or fresh berries for an extra special touch.
