Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup molasses
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup boiling water
  • For the Orange Glaze:
  • 1 1/2 cups powdered sugar
  • 2-3 tablespoons fresh orange juice
  • 1/2 teaspoon orange zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the molasses and eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the boiling water, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. While the loaf cools, prepare the glaze. In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth. Add more orange juice if needed to reach desired consistency.
  10. Once the loaf is completely cool, drizzle the orange glaze over the top. Let the glaze set before slicing and serving.

Notes

  • For a richer flavor, use dark brown sugar.
  • If you don’t have fresh orange juice, you can use store-bought, but fresh is best for that vibrant citrus taste.
  • You can add chopped candied ginger to the batter for extra spice and texture.
  • This loaf is delicious on its own or served with a dollop of whipped cream or yogurt.
